Due to the natural fermentation process, our Kombuchas contain trace amounts of alcohol (less than 0.5%abv)

On average, a 12-ounce (355 ml) serving of kombucha contains 6-12 grams of sugar.
During fermentation, the SCOBY (symbiotic culture of bacteria and yeast) consumes most of the initial sugar lowers the final sugar content, which is then increased by adding fruit juices without further fermentation, in order to control alcohol content.

Kombucha, in general, contains 4-10mg of caffeine per 100ml.
In contrast to coffee, Kombucha has 10-25% of the caffeine content of a regular coffee beverage

Refrigeration is important for kombucha due to its live cultures. Without it, kombucha can become overly sour, fizzy, or even burst bottles due to CO2 buildup.
Refrigeration keeps alcohol levels stable, ensuring safety and compliance. Extended fermentation at room temperature can raise alcohol content beyond the legal non-alcoholic limit of 0.5%
